Cafe Style Pear and Raspberry Bread

I have been indulging in this lovely pear and raspberry bread all week,  easy to make and pop in the freezer to enjoy any time.

Ingredients
2 cups sugar
1 cup vegetable oil
4 eggs
2-3 mashed bananas
3/4 cup water
3 cups plain flour
2 tsp bicarb soda
1/2 tsp salt
1 cup raspberries
1 finely chopped pear (i don't even peel mine)

Method

  1. Preheat oven to 180 degrees C.  Grease 2 standard loaf pans or 1 bread tin with oil and line with baking paper.
  2. Using a mixer, beat the sugar and oil until mixed and then add eggs one at a time mixing after each one.  Add the mashed banana and water and mix.
  3. Sift the flour, salt, and bicarb soda; Add to the mixture and beat lightly until just combined.  Gently mix through chopped pear and raspberries.  Pour batter into prepared bread tin. and bake for 1hr or 45 mins in smaller tins.  They are done when a skewer comes out clean.  
I made mine in one standard size bread tin or you can make it in two loaf tins.

  3. Are you using a fan forced oven? Also, what are the dimensions of the pan you used. Mine keeps sinking in the middle and it's driving me crazy

    1. Im sorry its not working, I use a 11cm (H) x 10 cm (w) x 27cm(l)bread tin and use a fan forced oven. Does it sink during cooking or after?

      Try cooking at lower temp for longer and cover with foil if browning too much. I am making it again soon so will double check the recipe.

    2. Thankyou for your reply. It is sinking during cooking. It starts off looking fine. Though towards the end of cooking time it just sinks in the middle. I have even tried and tested new baking soda

  4. Do you have your oven at 180 with the fan on, or 160 with the fan on? Also, i am wondering if using 2 tspn of baking soda is making it rise too quickly and causing holes in the middle?

    1. I cook it at 180 with the fan on. I havent had a chance to test it yet but I think you are right, I think one tsp of soda would be better. This other recipe which I adapted from this one has only 1 tsp

    3. Ok so have just made another batch and it should be plain flour not self raising. I have amended the recipe. if you wish to use self raising you would deffinately need to cut back on the bicarb soda.
